Yellow Squash Rings For a fun onion ring swap, try these crunchy jerk-seasoned squash rings.


Ingredients: 

  • Vegetable oil for frying  
  • 2-pounds Yellow squash trimmed and cut into 1/4-inch rings, seeds removed  
  • 1 1/2 cups all-purpose flour  
  • 3/4 cup cornstarch  
  • 2 tablespoon Ja Makin’ Me Crazy Jamaican jerk seasoning  
  • 1/4 cup water  
  • 1 12-ounce bottle ginger beer or hard cider  
  • 2 cups Ja Makin’ Me Crazy Marinade 

 

Directions: 

Step 1. Preheat oven to 200 degrees F.

Step 2. In a large saucepan, heat 1 1/2-inches of oil to 375 degrees F.

Step 3. Pat squash rings dry with paper towels. Place squash rings in a large resealable plastic bag. Add 1/2 cup flour, seal bag, and shake to coat.

Step 4. In a large bowl combine 1 cup flour, cornstarch, jerk seasoning. Whisk in water. Fold in ginger beer until smooth.

Step 5. Working in batches of 4 or 5, dip squash rings into batter and add to hot oil. Fry 2 to 3 minutes or until golden brown.

Step 6. Remove to paper towels to drain. Sprinkle with additional seasoning Return oil to 375 degrees F between batches.

Keep squash warm in the oven on a baking sheet while frying remaining slices. Serve hot with JMMC Marinade.
