Why We Use Guajillos
Compared to tomatoes, guajillo peppers offer a distinct flavor profile with a fruity, smoky sweetness and a milder heat level, making them a great choice for adding depth and complexity to dishes while still being accessible to those with moderate spice tolerance.
Additionally, guajillo peppers tend to be higher in certain antioxidants due to their higher carotenoid content, particularly beta-carotene and beta- cryptoxanthin, compared to most tomato varieties.
Flavor: Guajillo peppers have a richer, more complex flavor with fruity notes, a hint of smokiness, and a milder heat compared to the acidic and sweeter taste of tomatoes.
Heat Level: Guajillo peppers are considered medium heat, making them suitable for a wider range of palates compared to hotter chili peppers, while tomatoes have virtually no heat.
