Ingredients:
- 4 medium pieces of salmon fillets
- 2 1/2 cups Hawt Mess Marinade
- 1/2 of purple Onion finely chopped
- 1 habañero pepper finely chopped (remove seeds for milder heat)
- 1 mango diced
- 2 medium tomatoes diced
- 1 clove of roasted garlic and chopped
- 2 springs of fresh cilantro finely chopped
- 1 tablespoon of lemon juice
- 1 teaspoonful Kosher salt
- 1/2 teaspoonful of pepper
- 2 bunches of Cambray onion pan-roasted
Directions:
Step 1. Place the salmon in a glass dish and add the Haw Mess marinade cover with plastic wrap. Marinate in the refrigerator about 30 - 40 minutes.
Step 2. For the pico de gallo, in a bowl mix all the ingredients and season with salt and pepper.
Step 3. Bake salmon fillets at 350 degrees on a cedar plank until flaky.
Step 4. Let salmon fillet set for a couple minutes and top with a little pico de gallo and accompany with roasted chambray onions.
Step 5. Serve with your favorite cold liquid refreshment
