Mama's Day Jerk Chicken Salad



Super simple and quick. We took to a Mother's Day Event and served on crackers, but on top of a bed of greens, or put on a croissant or wrap it up in a tortilla to take it from a snack to a meal.

½ Roasteries Chicken, shredded – skin removed

½ C Pineapple, diced – fresh or can, either will do.

2 Stalks Celery, diced

1 Red Apple, cored and chopped

4 Green Onion, chopped

¼ C-ish Ja Makin Me Crazy

½ C-ish Mayo

Mix chicken, sauce and mayo in a bowl. Let sit overnight and stir in the fruit and veggies right before serving, that way they are super crisp. Very easy and the feedback was all love!

Don’t do sugar? That’s okay you can use our spice blend Dis Ye Island Life. I would use 1 – 2 tablespoons and add some apple cider vinegar as substitute to the sauce.
