4X Crazy Vegan Bean Salad


Ingredients:

  • One can each of dark kidney, garbanzo and cannellini beans rinsed

  • Half of a red onion sliced

  • One small zucchini quartered and sliced

  • One cob of roasted corn kernels

  • Half a bunch of cilantro chopped

  • 1/4 to 1/2 cup of Ja Makin' Me Crazy marinade sauce

  • Extra Virgin Olive Oil

Directions:

Step 1. Mix together all but last two ingredients.

Step 2. Pour sauce over and add oil to your level of preference and mix well.

Step 3. Refrigerate to chill. The longer it sits the more the ingredients absorb the sauce. Oma likes for hers to sit overnight.

* You can also substitute Ja Makin' Me Crazy seasoning mix for sauce if you want a lighter version or add seasoning to the sauce and oil for an extra spicy version.
